Green Tomato Pie
4 medium green tomatoes
1 c sugar
1 tsp cinnamon
1/4 tsp allspice, 1/4 tsp nutmeg, 1/4 tsp ginger, 1/8 tsp clove
small chunks of butter
3 Tbsp apple cider vinegar
Slice tomatoes thin (for three layers). Sprinkle bottom pie crust
lightly with flour and place first layer of tomatoes on bottom
unbaked pie crust of a single pie pan. Mix sugar and spices together
and sprinkle over each layer of tomatoes. Pour vinegar over top
of tomatoes. Top with chunks of butter. Place top crust over top layer
of tomatoes and chunks of butter and slit for steam holes.
Bake at 350 degrees for approx 3/4 hour.
Serve with slices of sharp cheddar cheese.
